Best Banana Bread IMage 2

Low carb, Low sugar, Dairy free


Ingredients:

  • 1 cup almond flour
  • 1 cup whole wheat flour
  • 2 tablespoons ground flax seed
  • 1 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 4 over ripe bananas
  • 3/4 cup coconut sugar
  • 1/2 cup coconut oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup finely chopped pecans or walnuts




Directions:

  • In a mixing bowl combine the following:
    • Almond flour
    • Whole wheat flour
    • Baking soda
    • Salt
  • Take 2 of the ripe banana and the sugar and whip till light and fluffy with hand mixer
  • Then Melt coconut oil
  • Then add
    • 2 large eggs
    • 1 teaspoon vanilla to the banana mixture and mix together
  • Mash the last 2 banana in a separate bowl
  • Combine the wet mixture with the flour mixture fold nuts into it 
  • And slowly fold in the 2 mashed banana
  • Line your baking dish with parchment paper to help easily remove when cool
  • Place batter in baking dish
  • 30 mins covered 350 degrees
  • Then uncover and place back in oven for additional 30 mins
  • Take out and cool before slicing
