
Low carb, Low sugar, Dairy free
Ingredients:
- 1 cup almond flour
- 1 cup whole wheat flour
- 2 tablespoons ground flax seed
- 1 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 4 over ripe bananas
- 3/4 cup coconut sugar
- 1/2 cup coconut oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup finely chopped pecans or walnuts
Directions:
- In a mixing bowl combine the following:
- Almond flour
- Whole wheat flour
- Baking soda
- Salt
- Take 2 of the ripe banana and the sugar and whip till light and fluffy with hand mixer
- Then Melt coconut oil
- Then add
- 2 large eggs
- 1 teaspoon vanilla to the banana mixture and mix together
- Mash the last 2 banana in a separate bowl
- Combine the wet mixture with the flour mixture fold nuts into it
- And slowly fold in the 2 mashed banana
- Line your baking dish with parchment paper to help easily remove when cool
- Place batter in baking dish
- 30 mins covered 350 degrees
- Then uncover and place back in oven for additional 30 mins
- Take out and cool before slicing
