
Ingredients

2 tablespoons of olive oil
- 1/2 cup chopped yellow onion
- 1 stalk of chopped celery
- 1 1/2 cup of peeled sun chokes
- 1/2 cup of diced carrots
- 1/4 cup of green lentils ( rinsed)
- 1/2 teaspoon of paprika
- 1/4 teaspoon of cumin
- 2 minced cloves of garlic
- 2 tablespoons of tomato paste
- 5 cups of vegetable broth
Directions
- Place your stock pot over medium heat add your olive oil
- Add onions carrots and celery till onions are translucent
- Add sunchokes
- Add your spices and stir together
- Add garlic to put with tomato paste
- Stir together and add broth
- Bring to a boil
- Reduce heat and simmer for 40 mins until lentils are tender
