Ingredients

  • 1 Siete cassava flour tortilla 
  • 1/2 steamed Japanese sweet potato 
  • 1/2 diced onion 
  • 1/2 cup organic cauliflower rice 
  • 1/2 cup raw organic spinach 
  • 1/2 cup chopped arugula 
  • 1 tablespoon Kite hill cream cheese 
  • Hawthorne valley ruby kraut ( your preference of how much) 
  • Pink salt 
  • Pepper 
  • Non stick coconut oil spray 
Directions
  • Chop and dice onion
  • Slice your 1/2 Japanese sweet potato
  • Spray non stick pan with coconut oil and add chopped onion
  • Once they get translucent add riced cauliflower to pan
  • Heat your small pan and spray with non stick spray and place tortilla in pan to toast ( flip when golden)
  • Add chopped sweet potato to pan add your raw spinach to pan
  • Mix well together
  • Spread the Kite Hill cream cheese on your tortilla
  • Put your sweet potato mixture on top
  • Sprinkle pink salt and pepper
  • Chop your arugula and place on top
  • Add a big scoop of Hawthorne Valley Ruby Kraut on top!
